Rainbow Veggie Quesadilla

Ingredients:

  • Whole wheat tortillas
  • Shredded cheese (cheddar, mozzarella, or dairy-free)
  • Red: diced red bell peppers or cherry tomatoes
  • Orange: shredded carrots
  • Yellow: corn or yellow bell peppers
  • Green: spinach, peas, or zucchini slices
  • Purple: purple cabbage or beets (roasted is best)
  • Optional: black beans or grilled chicken for protein
  • Olive oil or cooking spray
