Rainbow Veggie Quesadilla
Ingredients:
- Whole wheat tortillas
- Shredded cheese (cheddar, mozzarella, or dairy-free)
- Red: diced red bell peppers or cherry tomatoes
- Orange: shredded carrots
- Yellow: corn or yellow bell peppers
- Green: spinach, peas, or zucchini slices
- Purple: purple cabbage or beets (roasted is best)
- Optional: black beans or grilled chicken for protein
- Olive oil or cooking spray
